Another Andalusia, an hour from Seville

North of Seville the landscape changes completely. The Guadalquivir valley gives way to the mountains: holm and cork oaks, chestnut trees, streams and white villages perched on the hills. This is the Sierra de Aracena y Picos de Aroche, a natural park that for many Sevillians is the classic escape when the heat sets in.

Aracena is its natural capital: a town with a castle and a church on top of the hill, cobbled streets and a cave beneath its feet. Around it lies the dehesa, the landscape behind one of the most prized products of Spanish cuisine.

The Cave of Wonders
Beneath the castle hill lies a cave of galleries, underground lakes and formations that look sculpted. It opened to visitors in the early twentieth century and was one of the first show caves in Spain.
Visits inside are made in groups at set times, so the cave sets the rhythm of the day.
Ham and the dehesa
Iberian pigs roam freely in the dehesa, and in autumn and winter they fatten on acorns from the holm oaks: this is the montanera. The mountain climate, with cold winters and dry summers, is key to the slow curing of the hams in the drying cellars.
Understanding that cycle — animal, landscape and time — changes the way you look at, and taste, a good ham.

When it fits your trip

Aracena is just under a hundred kilometres from Seville. It is a full-day trip that works very well in the hot months, when the mountains are milder, and in autumn, when the dehesa changes colour and the montanera begins.

If you only have room for one day trip, compare it with Ronda and the white villages or Córdoba: Aracena is the choice for nature, food and a slower pace.
